From using lactase to checking the result
Lactase breaks down lactose, the sugar in milk, into glucose and galactose. Production teams need to select an enzyme and processing conditions and check residual lactose in the finished product. Kerry’s portfolio includes NOLA® Fit and Ha-Lactase™. The training will connect production decisions with laboratory testing and questions arising in lactose-free dairy manufacturing.
Dedicated session: LactoSens tests and reader
LactoSens® is a biosensor system for residual lactose measurement, used with the LactoSens®R Reader. The manufacturer reports a measurement time of about three minutes; samples are prepared separately according to the instructions. Kit suitability varies: LactoSens®R for NOLA® Fit is designed for products treated with NOLA® Fit. We will cover test and reader operation, matching the kit to the lactase and product, and reading results within the measurement range.

Who the training is for
We welcome managers and technologists at dairy companies in Uzbekistan, as well as laboratory and quality specialists launching or already producing a lactose-free range. The organiser is LabLog Group, Kerry’s partner in Uzbekistan. Speakers include Kerry representatives, including a technologist, and LabLog specialists.
